Sund Panjiri – Ingredients:
1 cup semolina (suji)
1 cup wheat flour (gehun ka atta)
1 cup ghee
1 cup powdered sugar
1 cup chopped almonds
1 cup chopped cashews
1/4 cup chopped melon seeds
1/4 cup chopped dried coconut
1/4 cup poppy seeds (khus-khus)
1/4 cup fennel seeds (saunf)
1/4 cup dried rose petals
1/4 tsp green cardamom powder (choti elaichi)
To start with, first, heat a heavy-bottomed pan. After heating the pan add the semolina to it. Roast it over medium heat for around 10-12 minutes and stirring constantly. Wait until it turns light golden brown and starts to release a nutty aroma.
Now heat the ghee until it melts and add the roasted semolina. Roast the mixture over low flame for about 20-25 minutes. while stirring constantly. Wait until it takes a deep golden brown color.
Now add the sugar/jaggery in it and mix well and continue to roast for another 5-7 minutes. Stir constantly.
Now, add the chopped nuts like – almonds, cashews, melon seeds. Add dry coconut pieces, some poppy seeds, only a few fennel seeds. Finish it with adding some dried rose petals. Mix everything and roast for another 10 minutes.
Add green cardamom powder and mix well on low flame. Now remove the Panjeri from the heat and let it cool.
Transfer the Sund into an airtight container. Store it and consume it within 2-3 weeks.
